This creamy one-pot garlic pasta is a quick, easy, and delicious meal perfect for any weeknight. All ingredients cook together in one pot, creating a flavorful and comforting dish with minimal cleanup.

  • 225 g Pasta (Spaghetti, Linguine oder Penne)
  • 1 EL Butter oder Olivenöl
  • 4 Knoblauchzehen, gehackt
  • 475 ml Milch (Vollmilch bevorzugt)
  • 240 ml Wasser (oder so viel, dass die Pasta bedeckt ist)
  • 75 g frisch geriebener Parmesankäse
  • ½ TL Salz
  • ¼ TL schwarzer Pfeffer
  • 1 TL Italienische Kräuter
  • Optional: 2 EL Frischkäse oder Sauerrahm (für zusätzliche Cremigkeit)
  • Optional: Gehackte Petersilie oder Basilikum zum Garnieren

Instructions

  • In einem großen Topf oder einer tiefen Pfanne Olivenöl oder Butter bei mittlerer Hitze erwärmen. Gehackten Knoblauch und italienische Kräuter hinzufügen und ca. 1-2 Minuten braten, bis es duftet (Knoblauch nicht bräunen).
  • Die ungekochte Pasta, Milch, Wasser, Salz und Pfeffer in den Topf geben. Sicherstellen, dass die Pasta größtenteils mit Flüssigkeit bedeckt ist; bei Bedarf mehr Wasser hinzufügen.
  • Alles zum Kochen bringen, dann Hitze auf mittlere bis niedrige Stufe reduzieren. Unter regelmäßigem Rühren (alle 1-2 Minuten) ca. 12-15 Minuten köcheln lassen, bis die Pasta al dente ist und die Flüssigkeit zu einer cremigen Sauce eingedickt ist.
  • Den Topf vom Herd nehmen. Den geriebenen Parmesan und optional Frischkäse oder Sauerrahm unterrühren, bis der Käse geschmolzen und die Sauce cremig ist.
  • Abschmecken und gegebenenfalls nachwürzen. Sofort servieren, optional mit frischer Petersilie oder Basilikum garnieren und mit zusätzlichem Parmesan bestreuen.

Notes

  • Pasta Choice: Long pasta like Linguine or Fettuccine is preferred for this dish as they absorb the creamy sauce well. Short pasta like Penne or Rigatoni also works. Ensure the cooking time is not too short. For gluten-free pasta, adjust cooking time according to package instructions.

  • Cheese Variations: While Parmesan is classic, Pecorino Romano for a spicier note or grated mozzarella for extra creaminess can be used.
  • Vegan Version: Replace cream with a plant-based alternative like oat or soy cream and use nutritional yeast for a cheesy flavor.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. When reheating, the sauce may thicken; simply add a splash of milk, broth, or water to restore creaminess.
