Delicious homemade Eierlikör (advocaat) pralines, perfect for any occasion. These creamy treats are easy to make and sure to impress.

- 200 g Dark chocolate, at least 70% cocoa solids
- 100 ml Eierlikör, creamy variety without alcohol
- 200 ml Cream, full-fat
- 1 tsp Vegetable gelling agent (e.g., agar-agar)
- Cocoa powder for dusting, unsweetened
- Nuts or desiccated coconut, optional, for decorating
Instructions
- Chop the dark chocolate coarsely and place it in a heatproof bowl.
- Bring water to a simmer in a pot and place the bowl over the double boiler.
- Stir regularly until the chocolate is completely melted and has a smooth consistency.
- In a separate bowl, whip the cream lightly until stiff, without making it too firm.
- Remove the melted chocolate from the heat and let it cool slightly.
- Add the Eierlikör to the cooled chocolate and stir well.
- Gently fold the whipped cream into the chocolate-Eierlikör mixture until everything is well combined.
- Prepare the vegetable gelling agent according to package instructions.
- Carefully add the prepared gelling agent to the filling and stir quickly to distribute it evenly.
- Let the mixture cool briefly, but do not let it set.
- Using a teaspoon or piping bag, place small portions onto a baking sheet lined with parchment paper, leaving enough space between portions.
- Let the pralines set in the refrigerator for at least two hours.
- After setting, dip the pralines in melted dark chocolate or dust with cocoa powder.

- For a creamier texture, gently warm them.
- Serve with whipped cream or fresh fruits.
