Description

This dessert combines the warmth of caramelized apples with crispy streusel and the irresistible contrast of melting vanilla ice cream, blending tradition and innovation. Historically, apple crumble has roots in wartime Britain, while baked apples are a classic German winter treat.

Ingredients

Scale

Zutaten

  • 600 g säuerliche Äpfel (z. B. Boskoop, Topaz, Berlepsh, Elstar)
  • 50 g Rohrzucker
  • 0.25 TL Zimt
  • 1 TL Speisestärke
  • 1 TL Zitronensaft
  • 40 g Mehl
  • 20 g Walnüsse, grob gehackt
  • 40 g Haferflocken
  • 25 g Zucker
  • 40 g Butter
  • 4 Kugeln Vanilleeis

Instructions

Zubereitung

Notes

Hinweise & Tipps

  • This dessert combines the warmth of caramelized apples with crispy streusel and the irresistible contrast of melting vanilla ice cream, blending tradition and innovation. Historically, apple crumble has roots in wartime Britain, while baked apples are a classic German winter treat.
  • For a more intense flavor: Let the marinated apples rest for about 10-15 minutes. During this time, the spices penetrate deeper into the fruit, and the sugar begins to draw juice from the apples, leading to an even more delicious filling.
  • Why cold butter is so important: Cold butter melts slower during baking, creating steam bubbles in the dough that make the streusel airy and crispy. Using soft butter would result in a dense dough instead of loose crumbs.
  • Important baking tip: Avoid opening the oven too often, as this can cause the oven temperature to fluctuate and prolong the baking process. A quick glance through the oven door is usually sufficient. If streusel brown too quickly, cover loosely with aluminum foil.
  • After baking, let the crumble rest for at least 10-15 minutes before serving. This allows the juices to set and the streusel to become even crispier.
  • Best way to enjoy: Take a combination of soft, cinnamon apples, crispy streusel, and a touch of melting vanilla ice cream with each spoon. This trio of textures and temperatures is what makes this dessert irresistible.
  • Optional serving ideas: Dust with powdered sugar, garnish with fresh mint leaves. Instead of vanilla ice cream, serve with a dollop of freshly whipped cream (perhaps with cinnamon or vanilla), warm vanilla sauce, or creamy custard. For a decadent touch, drizzle with caramel sauce or serve with salted caramel ice cream.
  • Crumble variations: Add other chopped nuts like almonds or pecans to the streusel. Oats make the crumble more rustic and nutty. Mix different apple varieties for a complex flavor profile (e.g., sweet Gala with tart Boskoop or Braeburn). Enhance the spice mix with a pinch of nutmeg, cardamom, or ginger powder. In summer, add fresh berries like raspberries or blueberries for extra fruitiness and color.
  • Preparation tip: The crumble can be prepared the day before and baked just before serving to ensure freshness and crispiness.
